What is it about pancakes that makes them so irresistible?
The answer is simple. Pancakes, just like their very close relative, the waffle, are reserved for days you look forward to. They are signifiers of fun, relaxation, enjoying yourself.
I have some awesome Keto pancake recipes on this website already - for example my almond cream cheese pancakes. They use, as the name suggests, almond flour and cream cheese and are one of my most popular recipes.
This time I wanted to make healthy grain free pancakes that were extra fluffy extra light and extra thick - and an alternative for my readers who are allergic to nuts.
Coconut flour cinnamon pancakes!
I'm sure you'll absolutely love these pancakes. Coconut flour is my absolute favourite grain free flour and, as an added bonus, very healthy. It is really high in fibre and has a lovely mild coconut taste.

Ingredients
Here are the ingredients we need:
- Eggs - These need to be large, room temperature eggs. Ideally, super-fresh! We separate the whites from the yolks.
- Butter - or use coconut oil for a dairy-free version
- Coconut flour - Naturally gluten-free and paleo, this is one of my favorite low carb flours.
- Coconut milk - Any milk of your choice works here. I kept with the coconut theme. We need it to loosen the batter as coconut flour is very absorbent.
- Baking powder - To make the pancakes nice and fluffy
- Cinnamon - Adds oodles or warm flavor. I used 1 teaspoon, but feel free to double or even triple the amount for extra oomph.
- I also added a bit of sugar free syrup for a touch of sweetness. You could replace it with honey or coconut fugar for a paleo version.

The Secret To Fluffy Pancakes
You have to beat the egg white until they form stiff peaks and fold them into the batter at the very end.
I used to think it was impossible to get egg whites stiff - until I discovered some very useful tips, listed in my post for this strawberry mascarpone tart. Follow the instructions and it'll ALWAYS work!
Instructions
Let me show you how to make super fluffy cinnamon pancake batter! The method is the same as for my low carb waffles. After that, all we need to do is fry the pancakes. Here are the basic steps:
STEP 1
Beat the egg whites until stiff peaks.
STEP 2
In a second bowl, blend all other ingredients until smooth, including the egg yolks.
STEP 3
Fold the egg whites into the pancake batter, keeping as much air in as possible.
STEP 4
Melt butter in a large non-stick skillet. Fry the pancakes. Flip once the sides are set and the top starts to bubble.
Recipe TOP TIPs
The one thing to note with coconut flour pancakes is that you need to a lil' bit of patience when frying them. Keep your stove to a low or medium heat so they do not burn!
If you have a large non-stick (!!) pan, you can make 2 pancakes at a time. Watch'em with hungry eagle eyes and as soon as they start bubbling on top, turn them over.
Toppings
I slathered my pancakes with sugar free syrup (check out the Lakanto or Sukrin brands).
We also like to top them with sour cream and berries such as blueberries, raspberries, strawberries or blackberries.

Can you freeze them?ย
Yes! I love to make a double batch and freeze some pancakes for later. Just pop them in toaster straight from frozen! Toasting is also a good way to re-vitalise leftover pancakes which you have stored in the fridge. This is where the small size of these cinnamon pancakes comes in handy.
Store in the fridge for up to 4 days or freeze for up to 3 months.
Can you use the pancake batter for waffles?ย
Absolutely! If you want to mix things up a bit, simply use the coconut flour pancake batter in your waffle maker. Grease it well!

Fluffy Cinnamon Pancakes (Coconut Flour)

Equipment
- non-stick frying pan, 25-30cm diameter
Ingredients
- 4 eggs separated
- ยฝ cup butter melted (90g), or coconut oil
- 4 tablespoon coconut flour
- 2 tablespoon coconut milk or almond milk
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1 teaspoon Lakanto maple flavored syrup or sweetener of choice (optional)
Instructions
- Separate the eggs. In a large mixing bowl with an electric blender or in a food processor, blend the egg yolks with the melted butter, coconut flour, coconut milk, baking powder, cinnamon and optional sweetener.
- In a second bowl (must be dry, metal or porcelain), whisk the egg whites with a handheld electric mixer until stiff peaks form. The stiffer the whites, the fluffier your pancakes will be!
- Fold the egg whites into the pancake batter.
- Melt butter or coconut oil in a non-stick frying pan over low-medium heat. Add 3 tablespoons of batter per pancake. In a large frying pan, you can fry 2 pancakes at a time. Fry for around 2-3 minutes.
- Flip the pancakes with a wide spatula once the top starts bubbling. Fry on the other side for around 1 more minute. The mixture makes 6 pancakes of 10cm diameter each.

Hi Kay, I have a whole coconut flour recipe category. In most recipes, you can also replace the almond flour with a 50 - 50 blend of sunflower seed flour and sesame seed flour.

Hi, if I make this can't the leftover batter be kept or frozen? If one is filling then the rest would go to waste seeing as the easiest measurements are 3 or 6 pancakes!!

I just make the rest of the pancakes and then place the left over pancakes in a zipbag and either put them in the fridge or freezer. for later meals.

Hello Toni, I"m so sorry to hear about your diagnosis. The good news is though that you can absolutely reverse type 2 diabetes with a low carb diet. It's a big change, but there are decent alternatives for bread, pasta, rice and all those wonderful foods that are unfortunately not so good for us.
