This easy 90 second keto bread is a life-saver for those moments when you NEED a sandwich and there's no low carb bread in the house. My microwave bread toasts well and has no eggy taste. It contains just 4 ingredients.
I love baking keto bread, which I slice and freeze. There's this low carb bread, my flaxseed bread with coconut flour and this popular almond flour bread.
The thing is, we all like bread here. And we always run out of it.
So, what to do when you want just ONE slice of crunchy, warm toast without having to bake an entire loaf?
Thankfully, with a microwave you can solve this dilemma quickly. Simply make this 90 second keto bread.
Even with mixing the ingredients, you'll be able to have this bread ready in 3 minutes.

🌟 Why You'll Love This Recipe
- Fluffy, soft texture - just like white toast
- 4 ingredients
- No eggy flavor
- Naturally gluten-free and dairy-free
- Keto friendly - only 1.6g net carbs
- Ready from scratch in 3 minutes
Ingredients
Here are the ingredients you'll need:
- Egg white - Using only the egg white and not the yolk means there is no eggy taste.
- Almond flour - I used regular almond flour. If you want to use SUPER FINE almond flour such as Bob's Red Mill, increase the amount of water to 1 tablespoon.
- Psyllium husk powder - Gives the bread a stronger texture, similar to whole-wheat bread. You can use flaxseed instead, or a pinch of xanthan gum.
- Baking powder
- Water - or use almond milk
See the recipe card for full information on ingredients and quantities.
Note - By the time I had shot this picture, the baking powder had begun to fizz up (which is a good sign as it means it's fresh!). It might look like a lot, but it is the same amount as the psyllium powder.
Instructions
It's so simple to make keto bread in the microwave. Here are the basic steps.
For detailed instructions, scroll down to the recipe card.
Step 1: Combine all ingredients in a small bowl and mix with a fork.
Step 2: Fill the dough into a well-greased microwavable container. Spread well to ensure there are no large air bubbles.
I used melted butter to grease mine, but you could use coconut oil, avocado oil or even olive oil.
Step 3: After microwaving on high for 90 seconds, your single serving of "emergency toast" is done.
The bread shrinks a bit and comes off the edges so it's easy to release from the container.
At this point, the bread is soft and looks a bit pale. Don't let this discourage you.
Image 4 and 5 show the bread from both sides. As you can see, it has a fluffy, light texture.
And once you toast, grill or pan-fry your Keto toast, it looks pretty, too!
Katrin's Top Tips
#1 Timing: I have made this recipe with several microwaves over the years. 90 seconds always seems to be the perfect cook time.
However, in your microwave, it may need less or more. Check after 75 seconds and see if it is cooked. Just don't overcook it or the bread will dry out.
#2 Container: I used a 5 x 5 inch glass dish, which produced 1 large slice of Keto toast. I made another portion using a 4 x 3 inch tupperware container, which I then sliced in two.
You could even use a mug and cut your bread into 3 smaller, round slices.
Variations
For a flavor lift, add a pinch of salt to the batter.
For a savoury version, add a pinch of garlic powder or paprika. Or, add 1 teaspoon of grated parmesan cheese or nutritional yeast.
Recipe FAQs
If you prefer to try this recipe with coconut flour, use 1 ½ tablespoon instead of the 3 tablespoons almond flour. Coconut flour absorbs more liquid than almond flour. I also recommend to increase the amount of water to 1 tablespoon.
Yes, you CAN make this recipe with a whole egg. This way you get a healthy golden colour even before toasting. The bread will taste a little eggy this way. I personally don't mind it, but some people don't like it.
Yes. In my many test runs to get the recipe just right, I have also made a version omitting the psyllium. As you can see, this bread is quite versatile!
I make a keto mayonnaise.
Yes. Bake it at 180C or 350F for around 12 minutes.
Serving Suggestion
I love 90 second keto bread toasted and then spread with butter and sugar free strawberry jam.
But, it tastes great with any topping, from sweet to savoury.
Often, I make grilled cheese with it. For this, I gently fry the bread in butter over a low heat. I add some garlic powder - but paprika would also give extra flavour.
Almond flour burns quicker than regular wheat flour. Take your time and keep the lid on so the cheese can melt without the bread burning!
You can also use it to make my 10 minute sugar free French toast.
Storage
Store the bread in an airtight container in the fridge for up 3 days. You can also freeze it for up to 3 months. Re-heat it in the toaster.

THANK YOU for this low carb bread recipe! My husband and I made it and used for grilled cheese sandwiches for lunch. We were so pleased it could be quickly made, has super low carbs, and tastes fine! Next weekend we are going for your cinnamon rolls. I'm in a wheelchair, so my husband does much of the cooking, we work together. I hope to work my way back to standing & cooking again, and then look out, I plan to dive into your recipes!

I see a lot of recipes calling for psyllium husk. Where do I buy it please? Also seen some posts saying some versions can make your food turn purple? Which brand do you use?
Katrin Nürnberger
Hi Clare, I have used BonPom and Green Origins without problems. I buy them from Ocado (so Waitrose will probably have them too) or Planet Organic, my local organic store. I haven't quite gotten to the bottom of why stuff turns purple for some people. It was always assumed it was to do with the brand, but recently I heard that it's to do with a reaction of psyllium to aluminium in baking powder. I've never had baking powder with aluminium in it, but if I ever discover one I must do a test.

I saw somewhere on another post that you can use a bread slice shaped container like you can put a sandwich in. Once the "dough" is ready it was microwaved.Would this work for your recipe? How long should I microwave it?
Best,
Bonnie
Katrin
This is exactly what I did in this post. You can see in the images the pyrex container I used. It happens to be a sandwich-sized square shape. I microwaved it for 90 seconds.
Linda
Woooohoooo bread... Keto style anyway. It was soooo good. Added salt though and used a whole egg, turned out perfect. Can these slices be frozen?
Katrin
Yes, I think that should be no problem. But if you want to freeze a whole batch I'd probably make a "real" low carb bread and slice it - much quicker! Have you tried this almond flour bread?

Just made my first sugarfreelondoner recipe - and I loved this quick microwave bread. I also made it into a delicious fried cheese and tomato toastie! Even my dog didn't get a look in as he waited patiently. As a recently diagnosed diabetic I've been eating too many carbs for too long, so I'am looking forward to trying other recipes. Thank you
Katrin
I'm so glad you like the recipe Rosie! I hope you'll try out more of my bread recipes, they are a good replacement for wheat bread. I used to miss bread so much until I started baking it myself. Just type "bread" into the recipe search box at the top of each page and you'll be able to check them all out.
Olga
Thanks for the recipe!
Could I bake it instead microwave it?
And could I use recipe to make a loaf by increasing the amount?
Katrin
Hi Olga, you could bake it at about 180 Celsius, probably for about 12 minutes. However, it's not really worth it to heat an oven to bake one slice of toast. I'd recommend my almond flour bread instead!
Bridget
Just made this bread - super easy and super tasty - than you!! Used milk instead of water and got amazing result.
Katrin
Good to know! Thanks for letting us know 🙂
Maria
OMG, this was so good! Thank you very much!

Hi Katrin,
I just wanted to say thank you for creating this site. I have only been Keto for 5 wks but know I have found my way of eating for life. So finding your alternative recipes is amazing. I don’t feel like I am giving anything up, just gaining health.
Bread of course is not allowed, so when I saw this recipe I was jumping with joy. I loved it, your a star ⭐️ I have made the granola and the fudge cake and I can’t wait to try more recipes.

Have not made the recipe yet but it's happening later today -- thank you!
Pound stores/Dollar stores sometimes have small glass containers with plastic lids
for packing in lunches, also look for small casserole dishes (Corning Ware in the US)
it doesn't matter how deep the sides are. You could also make a mold out of
a paper plate and rubber band, and line with greased parchment in a bread emergency!
Katrin
OMG I love your ingenuity!! Thanks for sharing 😉
