I love baking keto bread, which I slice and freeze. There's this low carb bread, my flaxseed bread with coconut flour and this popular almond flour bread.
The thing is, we all like bread here. And we always run out of it.
So, what to do when you want just ONE slice of crunchy, warm toast without having to bake an entire loaf?
Thankfully, with a microwave you can solve this dilemma quickly. Simply make this 90 second keto bread.
Even with mixing the ingredients, you'll be able to have this bread ready in 3 minutes.

Ingredients
Here are the ingredients you'll need:
- Egg white - Using only the egg white and not the yolk means there is no eggy taste.
- Almond flour - I used regular almond flour. If you want to use SUPER FINE almond flour such as Bob's Red Mill, increase the amount of water to 1 tablespoon.
- Psyllium husk powder - Gives the bread a stronger texture, similar to whole-wheat bread. You can use flaxseed instead, or a pinch of xanthan gum.
- Baking powder
- Water - or use almond milk

Note - By the time I had shot this picture, the baking powder had begun to fizz up (which is a good sign as it means it's fresh!). It might look like a lot, but it is the same amount as the psyllium powder.
Instructions
It's so simple to make keto bread in the microwave. Here are the basic steps.

Step 1: Combine all ingredients in a small bowl and mix with a fork.
Step 2: Fill the dough into a well-greased microwavable container. Spread well to ensure there are no large air bubbles.
I used melted butter to grease mine, but you could use coconut oil, avocado oil or even olive oil.
Step 3: After microwaving on high for 90 seconds, your single serving of "emergency toast" is done.
The bread shrinks a bit and comes off the edges so it's easy to release from the container.
At this point, the bread is soft and looks a bit pale. Don't let this discourage you.
Image 4 and 5 show the bread from both sides. As you can see, it has a fluffy, light texture.
And once you toast, grill or pan-fry your Keto toast, it looks pretty, too!
Katrin's Top Tips
#1 Timing: I have made this recipe with several microwaves over the years. 90 seconds always seems to be the perfect cook time.
However, in your microwave, it may need less or more. Check after 75 seconds and see if it is cooked. Just don't overcook it or the bread will dry out.
#2 Container: I used a 5 x 5 inch glass dish, which produced 1 large slice of Keto toast. I made another portion using a 4 x 3 inch tupperware container, which I then sliced in two.
You could even use a mug and cut your bread into 3 smaller, round slices.
Variations
For a flavor lift, add a pinch of salt to the batter.
For a savoury version, add a pinch of garlic powder or paprika. Or, add 1 teaspoon of grated parmesan cheese or nutritional yeast.
Recipe FAQs
If you prefer to try this recipe with coconut flour, use 1 ½ tablespoon instead of the 3 tablespoons almond flour. Coconut flour absorbs more liquid than almond flour. I also recommend to increase the amount of water to 1 tablespoon.
Yes, you CAN make this recipe with a whole egg. This way you get a healthy golden colour even before toasting. The bread will taste a little eggy this way. I personally don't mind it, but some people don't like it.
Yes. In my many test runs to get the recipe just right, I have also made a version omitting the psyllium. As you can see, this bread is quite versatile!
I make a keto mayonnaise.
Yes. Bake it at 180C or 350F for around 12 minutes.
Serving Suggestion
I love 90 second keto bread toasted and then spread with butter and sugar free strawberry jam.
But, it tastes great with any topping, from sweet to savoury.
Often, I make grilled cheese with it. For this, I gently fry the bread in butter over a low heat. I add some garlic powder - but paprika would also give extra flavour.
Almond flour burns quicker than regular wheat flour. Take your time and keep the lid on so the cheese can melt without the bread burning!
You can also use it to make my 10 minute sugar free French toast.
Storage
Store the bread in an airtight container in the fridge for up 3 days. You can also freeze it for up to 3 months. Re-heat it in the toaster.

- 1 egg white
- 3 tablespoon almond flour or ground almonds ***see notes
- ¼ teaspoon psyllium husk powder

Is there a way to make a bigger batch of this? It is SO good! Very close to regular bread consistency and taste and doesn't feel heavy like most keto breads.

I guess you could try microwaving more than one batch at once and increase the time in the microwave accordingly. I'm sure it would work, you'd have to test and see how much longer you'd need.

Why can't you use super fine almond flour?

You can, but I have not tried this myself so I cannot guarantee it will be amazing - though it might be. The consistency will be different. Super-fine absorbs more liquid than regular almond flour. If you have it in the house, give it a go and let use know how it comes out?

Thank you!!! I used ground flax seed instead of psyllium as it's what I had in the house. I just got back from a week in Florida for my granddaughter's wedding and completely blew my keto program, eating the way I used to, and gaining 4 pounds back from the 35 I've lost in the last 18 months. With no fresh groceries in the house and determined to get back to my program, I searched the cupboards and found albacore tuna in water, one of my favorite "go to's" on salads and in dips. Again, not much in the fridge. I made to large slices of the bread with frozen egg whites left over from Hollandaise sauce and toasted them. I melted some butter in a fry pan, added a little flax seed flour and almond flour to act as a thickener, added the tuna with a little bit of still fresh heavy cream, garlic salt, pepper and parsley and served the creamed tuna on toast. I would normally have put frozen peas in the mix but used frozen chopped broccoli instead, again what was in the house. Creamed tuna on toast was always an easy quick meal in the pre-keto days and the new version did not disappoint.

Yes, I would try 175 Celsius / 350 Fahrenheit for about 12 minutes. This way you can brown it at the same time.
