This easy 90 second keto bread is a life-saver for those moments when you NEED a sandwich and there's no low carb bread in the house. My microwave bread toasts well and has no eggy taste. It contains just 4 ingredients.

I love baking keto bread, which I slice and freeze. The thing is, we all like bread here. And we always run out of it.
So, what to do when you want just ONE slice of crunchy, warm toast without having to bake an entire loaf?
Thankfully, with a microwave you can solve this dilemma quickly. Simply make this 90 second keto bread.
Even with mixing the ingredients, you'll be able to have this bread ready in 3 minutes.

🌟 Why You'll Love This Recipe
- Fluffy, soft texture - just like white toast
- 4 ingredients
- No eggy flavor
- Naturally gluten-free and dairy-free
- Keto friendly - only 1.6g net carbs
- Ready from scratch in 3 minutes
Ingredients

Here are the ingredients you'll need:
- Egg white - Using only the egg white and not the yolk means there is no eggy taste.
- Almond flour - I used regular almond flour. If you want to use SUPER FINE almond flour such as Bob's Red Mill, increase the amount of water to 1 tablespoon.
- Psyllium husk powder - Gives the bread a stronger texture, similar to whole-wheat bread. You can use flaxseed instead, or a pinch of xanthan gum.
- Baking powder
- Water - or use almond milk
See the recipe card for full information on ingredients and quantities.
Note - By the time I had shot this picture, the baking powder had begun to fizz up (which is a good sign as it means it's fresh!). It might look like a lot, but it is the same amount as the psyllium powder.
Instructions
It's so simple to make keto bread in the microwave. Here are the basic steps.
For detailed instructions, scroll down to the recipe card.

Step 1: Combine all ingredients in a small bowl and mix with a fork.
Step 2: Fill the dough into a well-greased microwavable container. Spread well to ensure there are no large air bubbles.
I used melted butter to grease mine, but you could use coconut oil, avocado oil or even olive oil.

Step 3: After microwaving on high for 90 seconds, your single serving of "emergency toast" is done.
The bread shrinks a bit and comes off the edges so it's easy to release from the container.

At this point, the bread is soft and looks a bit pale. Don't let this discourage you.
Image 4 and 5 show the bread from both sides. As you can see, it has a fluffy, light texture.
And once you toast, grill or pan-fry your Keto toast, it looks pretty, too!
Katrin's Top Tips
#1 Timing: I have made this recipe with several microwaves over the years. 90 seconds always seems to be the perfect cook time.
However, in your microwave, it may need less or more. Check after 75 seconds and see if it is cooked. Just don't overcook it or the bread will dry out.
#2 Container: I used a 5 x 5 inch glass dish, which produced 1 large slice of Keto toast. I made another portion using a 4 x 3 inch tupperware container, which I then sliced in two.
You could even use a mug and cut your bread into 3 smaller, round slices.
Variations
For a flavor lift, add a pinch of salt to the batter.
For a savoury version, add a pinch of garlic powder or paprika. Or, add 1 teaspoon of grated parmesan cheese or nutritional yeast.
Recipe FAQs
If you prefer to try this recipe with coconut flour, use 1 ½ tablespoon instead of the 3 tablespoons almond flour. Coconut flour absorbs more liquid than almond flour. I also recommend to increase the amount of water to 1 tablespoon.
Yes, you CAN make this recipe with a whole egg. This way you get a healthy golden colour even before toasting. The bread will taste a little eggy this way. I personally don't mind it, but some people don't like it.
Yes. In my many test runs to get the recipe just right, I have also made a version omitting the psyllium. As you can see, this bread is quite versatile!
I make a keto mayonnaise.
Yes. Bake it at 180C or 350F for around 12 minutes.

Serving Suggestion
I love 90 second keto bread toasted and then spread with butter and sugar free strawberry jam.
But, it tastes great with any topping, from sweet to savoury.
Often, I make grilled cheese with it. For this, I gently fry the bread in butter over a low heat. I add some garlic powder - but paprika would also give extra flavour.
Almond flour burns quicker than regular wheat flour. Take your time and keep the lid on so the cheese can melt without the bread burning!
You can also use it to make my 10 minute sugar free French toast.
Storage
Store the bread in an airtight container in the fridge for up 3 days. You can also freeze it for up to 3 months. Re-heat it in the toaster.

Can you use coconut flour instead? I have tried some of your recipes and they are great and easily to follow.
Katrin Nürnberger
Hi Geleez, I am discussing a coconut flour version of the bread in the Recipe FAQ section.
Heather
Just made this and it will definitely become a go to snack if I don’t have keto bread made. Enjoying it with some almond butter but reckon it would make a delicious grilled cheese too so I’ll try that next.
John
Can we use a whole egg?
Katrin Nürnberger
Yes, you CAN make this recipe with a whole egg. This way you get a healthy golden colour even before toasting. The bread will taste a little eggy this way. I personally don't mind it, but some people don't like it.
Kay
Can you bake in an oven or air fryer ?
Katrin Nürnberger
Yes. Bake it in the oven at 180C or 350F for around 12 minutes (check whether it's done and increase if necessary). In the air fryer, it'll need a couple of minutes less than in the oven.
Magda
quick and wonderful!

Hi Katrin, if I use flax seed meal instead of psyllium husks, is the amount the same?
Katrin Nürnberger
I would use 1/2 teaspoon of ground flaxseed and see how you get on.

I love your recipe for "90 Second Keto Bread using egg whites". Actually I used liquid egg substitute that comes in a milk type container. For measurement I used the amount = to 1 egg of 3 tablespoon as listed on the container. I made one serving adding no taste enhancers & one serving with a small pinch of kosher salt, as my body is very sensitive to salt but I love it. I really like that this recipe taste like a whole grain bread and not eggy at all! Although I like the taste of egg but sometimes I want something that tastes like bread.
My only problem was air bubbles at the bottom of the mug. How do I eliminate them?
I would like to make more servings in a single cantainer. So that if I am having company I can make this to share with others. Any comments on how to go about that?
Your faithful viewer,
Suzi
Katrin Nürnberger
Hi Susan, I am not sure about the air bubbles. These could have come about from vigorous mixing - perhaps try to go a little slower. Or, let the mixture sit after whisking so the bubbles can rise and pop.
You should be able to scale the recipe and microwave the bread in a larger container. Of course, this would take longer. You'd have to test how many additional seconds you need.

This looks like a perfect breakfast or luncheon item. English muffin or toasted sandwich Thanks!! Thanks

Aloha from Hawaii! Oh my goodness!!! I made this 90 second bread today and what a treat!!! Keto can be difficult if you’re still longing for toast, grilled cheese or any meal that requires bread. This bread hit the spot! Not only is it filling, but the texture is exactly like the real thing. Even my husband enjoyed it! He’s not one to eat alternatives to the real thing. I’m so happy that when I have an urge for butter toast, 90 second bread will come to the rescue.
