This easy 90 second keto bread is a life-saver for those moments when you NEED a sandwich and there's no low carb bread in the house. My microwave bread toasts well and has no eggy taste. It contains just 4 ingredients.
I love baking keto bread, which I slice and freeze. There's this low carb bread, my flaxseed bread with coconut flour and this popular almond flour bread.
The thing is, we all like bread here. And we always run out of it.
So, what to do when you want just ONE slice of crunchy, warm toast without having to bake an entire loaf?
Thankfully, with a microwave you can solve this dilemma quickly. Simply make this 90 second keto bread.
Even with mixing the ingredients, you'll be able to have this bread ready in 3 minutes.

🌟 Why You'll Love This Recipe
- Fluffy, soft texture - just like white toast
- 4 ingredients
- No eggy flavor
- Naturally gluten-free and dairy-free
- Keto friendly - only 1.6g net carbs
- Ready from scratch in 3 minutes
Ingredients
Here are the ingredients you'll need:
- Egg white - Using only the egg white and not the yolk means there is no eggy taste.
- Almond flour - I used regular almond flour. If you want to use SUPER FINE almond flour such as Bob's Red Mill, increase the amount of water to 1 tablespoon.
- Psyllium husk powder - Gives the bread a stronger texture, similar to whole-wheat bread. You can use flaxseed instead, or a pinch of xanthan gum.
- Baking powder
- Water - or use almond milk
See the recipe card for full information on ingredients and quantities.
Note - By the time I had shot this picture, the baking powder had begun to fizz up (which is a good sign as it means it's fresh!). It might look like a lot, but it is the same amount as the psyllium powder.
Instructions
It's so simple to make keto bread in the microwave. Here are the basic steps.
For detailed instructions, scroll down to the recipe card.
Step 1: Combine all ingredients in a small bowl and mix with a fork.
Step 2: Fill the dough into a well-greased microwavable container. Spread well to ensure there are no large air bubbles.
I used melted butter to grease mine, but you could use coconut oil, avocado oil or even olive oil.
Step 3: After microwaving on high for 90 seconds, your single serving of "emergency toast" is done.
The bread shrinks a bit and comes off the edges so it's easy to release from the container.
At this point, the bread is soft and looks a bit pale. Don't let this discourage you.
Image 4 and 5 show the bread from both sides. As you can see, it has a fluffy, light texture.
And once you toast, grill or pan-fry your Keto toast, it looks pretty, too!
Katrin's Top Tips
#1 Timing: I have made this recipe with several microwaves over the years. 90 seconds always seems to be the perfect cook time.
However, in your microwave, it may need less or more. Check after 75 seconds and see if it is cooked. Just don't overcook it or the bread will dry out.
#2 Container: I used a 5 x 5 inch glass dish, which produced 1 large slice of Keto toast. I made another portion using a 4 x 3 inch tupperware container, which I then sliced in two.
You could even use a mug and cut your bread into 3 smaller, round slices.
Variations
For a flavor lift, add a pinch of salt to the batter.
For a savoury version, add a pinch of garlic powder or paprika. Or, add 1 teaspoon of grated parmesan cheese or nutritional yeast.
Recipe FAQs
If you prefer to try this recipe with coconut flour, use 1 ½ tablespoon instead of the 3 tablespoons almond flour. Coconut flour absorbs more liquid than almond flour. I also recommend to increase the amount of water to 1 tablespoon.
Yes, you CAN make this recipe with a whole egg. This way you get a healthy golden colour even before toasting. The bread will taste a little eggy this way. I personally don't mind it, but some people don't like it.
Yes. In my many test runs to get the recipe just right, I have also made a version omitting the psyllium. As you can see, this bread is quite versatile!
I make a keto mayonnaise.
Yes. Bake it at 180C or 350F for around 12 minutes.
Serving Suggestion
I love 90 second keto bread toasted and then spread with butter and sugar free strawberry jam.
But, it tastes great with any topping, from sweet to savoury.
Often, I make grilled cheese with it. For this, I gently fry the bread in butter over a low heat. I add some garlic powder - but paprika would also give extra flavour.
Almond flour burns quicker than regular wheat flour. Take your time and keep the lid on so the cheese can melt without the bread burning!
You can also use it to make my 10 minute sugar free French toast.
Storage
Store the bread in an airtight container in the fridge for up 3 days. You can also freeze it for up to 3 months. Re-heat it in the toaster.

Hi Katrin, thank you so much for this recipes. I loved it and my husband too ! I would like to prepare a version with no almond flour for breakfast. Can I use coconut flour? Thank you.
Katrin Nürnberger
Hi Diana, if you replace the almond flour with coconut flour, use only 1/3 the amount as coconut flour is way more absorbent.
Maria
If I use flaxseed meal ... do I have to omit the psyllium?
Katrin Nürnberger
Yes, that's correct 🙂
Leonie
Would it work with flax meal?
Katrin Nürnberger
Yes, definitely

This was so good! Way better than the other 90 second one I made with the cheeses. I also cooked one in my mini chaffle, but be careful how much you put in. My husband enjoyed a roast beef sandwich using this recipe but using the chaffle! Thanks for a good substitution for sandwich bread that is quick, and very good.

wow! i have never commented on a blog but this is this is genius - thank you so much for sharing all of your knowledge. I can't tell you how happy this makes me! Absolutely delicious. I made it using a mug and then sliced in two before putting in the toaster - it was very filling and turned out like a little english muffin. I only topped with butter and it was heaven with no carb crash! I think i will be eating this daily! So far i have tried your various mug cake recipes (all fab), coconut porridge, coconut pancakes (also amazing) as well as your almond flour pancakes that i also really enjoyed, rich & felt indulgent but hit the spot! Thank you again i am a new big fan and will be sharing with my family! x

OMG......FINALLY.....something that tastes like REAL bread without the usually heaviness of other Keto breads. Made this for lunch and had a ham and cheese sandwich (which we haven't had for over a year since going Keto) and fried it in butter.......YUMMMMMMMMMM.

Wow - thanks so much - we came back from a walk at 10pm and really wanted "something". I'd already made a batch of your scones at lunchtime, but just wanted BREAD. I did it in a 6x4 plastic microwave container (Poundland £1 for 6). Then toasted it, halved it and filled with grated mature cheddar that I popped in a frying pan to melt the cheese. I sliced the sandwich in 3 - gave one slice to my partner who said it was amazing. It really saved the day and think I'll have some lovely cheesey dreams.

I don’t own a microwave. Can you give tips on oven?
Also I use psyllium as a replacement for egg whites. One tsp of psyllium plus three tbsp of water left on side to swell up.
Katrin Nürnberger
I would bake at 180 C / 350F for about 12 minutes.
Lynne
Hi Katrin. I'm wondering how long the bread would stay fresh? If I made it on a Sunday would it be good for Monday morning?
Katrin Nürnberger
Yes, of course! It stays fresh for a few days. I would store it in the fridge and then toast.

This is perhaps the BEST microwave bread recipe I have tried. I made the mistake of using super fine almond flour the first time and it was like cardboard but tasted good. I went back and re-read the recipe and noted that it said to use ground almonds. I used almond meal and what a difference!! Since the almond skins are in the meal, it gives the bread a whole-wheat appearance and is light and fluffy. No eggy taste due to egg whites only. This is my go-to quick bread from now on! I quadruple the recipe and use an 8x8 glass baking dish- I increase cook time to 2 minutes and 30 to 40 seconds, depending on your microwave wattage (mine is 1000 watts). Then I cut into 4- 4" squares and I have toast during the week, or use two slices for grilled cheese!! Delish. Thanks, Katrin! I am sharing your site and recipe with my sister.

My only glass container is an 8x8...thanks so much for your comment. I'm gonna try this tonight!

My daughter is allergic to nuts can you use coconut
flour instead or anything else
Katrin Nürnberger
You'd have to use less coconut flour - I'd try 1 1/2 tbsp. Alternatively try sesame flour or sunflower seed flour
