This fluffy Keto cornbread is perfect for dunking into soup or mopping up gravy. It also works as a quick snack for when youโre on the go.
Cornbread is one of the cornerstones of American cuisine, and I came to love it when I was living in the US as a teenager. I always preferred the savoury over the sweet version and adored its moist, crumbly butteriness.
That's why I want to share this Keto cornbread with you today. It is a "no corn cornbread" and naturally gluten-free. Basically, you're getting the cornbread texture and feel at only 1.6g net carbs per slice.
The bread is soft and fluffy, with a moist, buttery crumb.
I love a bit of Mexican flavour, so I have also added cheese, bacon and jalapeรฑos. But the recipe works just as well without if you prefer a classic cornbread.

Is Cornmeal Keto Friendly?
Unfortunately not. Cornmeal is a high carb food and will kick you out of ketosis instantly. Cornflour and cornmeal - ground dried maize - contain 79g carbohydrates per 100g and very little fibre. Add the fact that most corn is genetically modified, the thought of traditional, "real" cornbread might become a little less appealing.
Ingredients
In this recipe, we are substituting cornmeal with ground almonds. Ground almonds are equivalent to coarse almond flour in the US. Their texture is closer to the rustic feel of cornmeal than super-fine almond flour.
Here are the other ingredients I am using:
- Flaxmeal, whey protein powder and coconut flour - The whey protein makes the cornbread fluffier. The flax adds to the rustic texture. Use golden flaxmeal rather than brown because it has a milder taste.
- Eggs - Use large, room temperature eggs.
- Butter and cream - Because cornbread needs to be rich and buttery!
- Baking powder and apple cider vinegar - Both help to make the bread rise.

Instructions
It is really simple to make a low carb cornbread. Here are the basic steps. Scroll down to the recipe card for a detailed method.
STEP 1
Combine the dry ingredients in a large mixing bowl.
STEP 2
Whisk the eggs until they are frothy and have doubled in size. Add the cream and butter and blend briefly.
STEP 3
Stir in the dry ingredientsย with a fork or spatula. The dough will thicken quickly. Last, fold in theย bacon pieces and jalapeรฑos.
STEP 4
Spread the cornbread batter into a well-greased skillet. Top with more cheese if you wish. Then, bake in the preheated oven until golden.
Katrin's Tip
The recipe is very versatile. You can add the cheese, bacon and jalapeรฑosย on top of the cornbread instead of stirring them into the dough.
Purists can leave them out altogether and even add a tablespoon of sweetener if you're after a sweet cornbread.
Variations
For more corn flavor, add a few drops of corn flavoring. It is available on Amazon.
It is possible to replace the whey protein powder with more almond flour.
Don't have a cast iron skillet? I have also made this recipe using a 9 x 5 inch pyrex casserole dish. Line the dish with parchment paper to prevent the bread from sticking.
You could even make keto cornbread muffins using a muffin pan. ย
Serving Suggestion
This bread is delicious gently warmed - all on its own.

Storage
Store in an airtight container in the fridge for up to 4 days. Or, pre-slice and freeze the bread for up to 3 months.

Ingredients
- 1 cup / 100g ground almonds / coarse almond flour NOT super-fine
- ยผ cup / 25g golden flaxseed meal
- 3 tablespoon whey protein powder unflavoured
- 3 tablespoon coconut flour
- 2 teaspoon baking powder
- โ teaspoon sea salt
- 4 eggs
- โ cup / 65g butter melted
- โ cup / 70g heavy cream
Optional Add-Ins and Toppings
- 4 slices streaky bacon
- 2 jalapenos
- 1 cup shredded cheese I used medium cheddar
Instructions
- Preheat the oven to 350ยฐ F / 180C / 160C fan.โฏ
- Place the bacon on a greaseproof lined baking tray and bake for 20 minutes until crisp. Flip half way through cooking for even crispness!ย Allow to cool and chop into small bits. ย
- In a medium bowl mix all dry ingredients - almond and coconut flour, flaxseed meal, whey protein, baking powder, salt. Optional: addย ยผ cup of grated cheese, bacon and jalapenos and stir.ย
- In a different bowl, beat the eggs with an electric mixer for about 3 minutes until airy and lighter in colour. Add the butter and cream and briefly whisk again until just combined. (Donโt over-whisk or the eggs will deflate!!)ย
- Add the dry ingredients and fold until fully incorporated.
- Pour the batter into a well-greased 10 inch skillet or 9 x 5 inch casserole dish lined with parchment paper. Optional: top with ยพ cup of cheese.ย ย
- Bake for around 30 minutes or until you can insert and remove a skewer without any crumbs sticking and golden on top.ย
- Allow to cool slightly before removing from the pan. Place on a wire rack to cool before slicing.

I haven't tried it, but it would definitely work as muffins. I'd go for 180 celsius / 356 Fahrenheit for about 18-25 minutes, depending on size. They're done when browned and a knife comes out clean - place aluminium foil on top if necessary to prevent them from going too dark.

Hi Jennifer, you can use double the amount of almond flour in place of the coconut flour. Coconut flour absorbs way more liquid than almond flour.

Double cream is what we call heavy cream over here in the UK. If you wanted to replace the almond flour with coconut flour I recommend you use only half the amount stated as coconut flour absorbs more liquid ๐
