My sugar free lemon posset contains only 3 ingredients and you make it in minutes! It's the lemon juice that makes this creamy keto pudding set like magic. A refreshing, zesty and simple low carb dessert. Serve with berries or crunchy keto shortbread.
Put the cream and granulated allulose in a medium saucepan. Heat over a low heat, stirring regularly until the sweetener has dissolved (**see notes). Let the mixture bubble gently for 2-3 minutes while stirring often.
Turn off the heat and add the lemon juice and zest. Stir to combine.
Pour the posset into 6-8 small dessert bowls or shot glasses. Cool to room temperature, then cover and chill in the fridge for at least 3 hours or overnight.
Notes
2.4g net carbs per serving. Makes 6 servings of about 80g each.** Stir diligently because the allulose can sink to the bottom of the pan and burn.Use ⅓ cup for any 1:1 sugar alternative. Also, any other sweetener should be powdered.This is a very rich and filling dessert. You could stretch it to 8 servings by serving it in shot glasses. This would make the posset 185kcal, 1.9g total carbs, 1.8g net carbs and 19g fat per serve.Option to decorate with berries or serve with a crunchy cookie (keto shortbread or keto biscotti).Store in the fridge for up to 4 days. Not suitable for freezing.
