Mix the yogurt, sweetener, matcha powder and vanilla extract until combined.
Spread the mixture out on baking or parchment paper and add the pistachios. Freeze until firm.
Break into pieces and enjoy.
Notes
Net carbs: 3.1g per 1 serving of 6. The pistachios are optional. You can use any nuts or seeds you like. Blueberries would also work well here. Store in the freezer for up to 3 months. Serve immediately after removing from freezer.
