Keto Apple Cider Donuts

These small but perfectly formed gluten free keto donuts are a real treat! Made with real apple and apple cider vinegar, and coated in a cinnamon sweetener mix, these keto apple cider donuts are a hit with the whole family.

Ingredients

Batter - dry ingredients

Batter - wet ingredients

  • 3 eggs large, room temperature
  • cup butter melted, 75g
  • 2 tablespoon apple cider vinegar
  • 1 apple 125g, measured after it is peeled, cored and chopped (circa 1 cup chopped)
  • 1 teaspoon vanilla extract

Coating

Instructions

  • Preheat the oven to 180 C / 160 Celsius Fan / 350 F. Grease a silicone donut pan with melted butter or oil.
  • Peel the apple and chop it into small pieces. Put these in a bowl, cover and cook in a microwave until soft (mine took 4 minutes at 900W). Alternatively, simmer on the stove with a splash of water until very soft. ***see recipe notes
  • In a food processor or high speed blender, blend the eggs until fluffy, pale in colour and double the size.
  • Add the melted butter, sweetener, apple cider vinegar, vanilla extract and cooked apple and blend.
  • Now add all remaining dry ingredients - almond flour, coconut flour, spices and baking powder. Blend until a smooth batter.
  • Fill into the prepared donut pan. Don't over-fill or you'll lose the hole! Bake for 14 minutes.
  • Let the donuts cool completely before removing from the pan.
  • Mix together the "cinnamon sugar" mixture. Brush the donuts lightly with melted butter and roll in the mixture until coated all over.

Notes

Net carbs: 1.9g per donut. Makes 16 donuts.
Optional add-ons to the cinnamon (optional but recommended): 
  • ¼ teaspoon ginger
  • ¼ teaspoon nutmeg
  • ⅛ teaspoon allspice
  • ⅛ teaspoon cardamom
***I started out with 125 grams of apple and ended up with 90 grams after microwaving.
*** Additional step if you DON'T have a high speed blender: Puree the cooked apples before adding them to the batter. This way you ensure that you have a smooth batter without apple bits.
