Keto Green Smoothie

This creamy Keto green smoothie is zingy, fragrant and super refreshing. The recipe includes healthy fats from avocado and almond butter and an optional scoop of protein powder for a balanced Keto breakfast.

Ingredients

  • 1 handful kale 15g
  • 1 handful fresh mint leaves, picked 10g
  • ½ avocado
  • ¼ fennel bulb 50g, or 1 celery stick
  • ¼ small cucumber (100g) 100g
  • 1 tablespoon protein powder unsweetened
  • 1 cup almond milk 240ml, unsweetened
  • 1 tablespoon almond butter
  • ½ lemon, juiced

Instructions

  • Scoop the avocado flesh out and place all ingredients into a high speed blender. Blend until smooth.
  • Adjust thickness by adding more almond milk if desired.

Notes

3g net carbs per cup. Makes 2 cups. Serve 1 cup alongside breakfast or 2 cups as a standalone breakfast.
Protein powder is optional. 
You can replace the almond milk with coconut milk or seed milk.
For a fruitier smoothie, add a handful of berries such as blueberries, strawberries or raspberries (plus 1 teaspoon of powdered sweetener if you have a sweet tooth). This will increase the carb count.
Store leftovers in an airtight container in the fridge for 1-2 days.
