Green goodness alert! This green omelette is packed with spinach and kale and has a creamy ricotta cheese filling.

Even though plain scrambled eggs or a couple of fried eggs with a perfect soft yolk can never truly get boring, it’s good to mix things up every one in a while. And why not bring some colour into this dull January at the same time? This green omelette is super-charged with vitamins and minerals (spinach! kale!) and super tasty thanks to the addition of 4 different cheeses.
There is something irresistibly fun about eating brightly coloured stuff – my kids were all over these omelettes. And yes, at some point there was talk about Hulk at the table. These green omelettes are easy and quick to make – I added some crispy kale chips I’d made earlier, but this is entirely optional.
